I made this for my family last Easter. They all loved it, which is kind of a big deal because they are so picky when it comes to healthy alternatives.
I will admit, there is a slight beet aftertaste, but it doesn’t change the fact that these are a great way to add beets into your diet! I used the pulp after juicing so I didn’t waste all that good fiber!

This is another nice ice cream recipe that hits the spot! I’m crazy for Halo Top ice cream, but these recipes are a bit creamier. Either way, ice cream will always be my downfall. I’m just happy that there are healthier alternatives to the traditional treat that don’t make me want to cry (well, I might cry because they taste so good)!

I made this cheesecake for a little margarita night with my classmates. I was tickled pink that I didn’t have any to bring home!
I made these with a paleo flour mix from Walmart. They were nice and soft, and because they don’t really rise, they were perfect for my Halloween cookie cutters!
I also made these cookies, but I added a dash of extra ginger because ginger is amazingly delicious!
Guess what…more pumpkin! And these are fantastic even without the chocolate! I only regret that they run out so quickly!
