I made this dish for my weekly lunches. However, my father and I ate much of it that day, and I had to make something else. It’s just that good!

This dish sparked my love for Thai curries! I usually replace the rice with cauliflower.

This recipe is kind of weird. I was falling in love with spaghetti squash and making every recipe I could find. I love hot wings, so I wasn’t really bothered by the amount of hot sauce the recipe called for, but my family pointed out how weird it is to eat something that’s like eating straight sauce. At least it’s healthy! Thus, I list it here. If you are so inclined, enjoy this recipe!

Curries are so flavorful! Replacing the rice with riced cauliflower will give you some extra veg, and you don’t have to worry about the rice getting stale in the fridge!

Another nice curry! I didn’t really get much of the lemongrass flavor, so I’m going to add more when make it again.

This soup is AMAZING! The marinated mushrooms (I also marinated some chicken) were so delectable that I could have eaten just them! I used “zoodles” (zucchini noodles made with my cheap splicer tool) instead of noodles, and this soup was gone too soon. 10/10 will remake ASAP.

I’m sure this pesto recipe is lovely, but I was also looking to use some of my avocados. I made the second pesto recipe, but other than that, followed the first. It turned out great! I’ll try the walnut pesto next time.

Mango is my favorite fruit, so I was VERY excited to try this recipe! However, I found it lacking something. I added some sriracha sauce, and it was AMAZING! Even just a little brought out the flavor without making it too spicy. I, on the other hand, enjoy spicy, so I added a bunch!

Phoenix doesn’t really get that cold, but I’ve been pinning comfort food like crazy! This paleo clam chowder recipe really is like the real thing! I replaced the potatoes with carrots to increase my veg intake, which my New England native parents deemed insane, but I still adored the flavor (they agreed…other than the carrot thing…)!
